Breakfast of Champions: The New Pina Colada

Reuniting and it feels so good.

Just this past December, I went on my fourth trip to Antigua (and that’s Antigua of Antigua Barbuda fame, not Guatamela) with the Boyfriend, and this time my best friend and her husband joined us.

And while we did make it to Shirley Heights for their Sunday live music and food festivities (we got nowhere near the food as the lines were epic!)

and we did think about going into St. John, the main city, to visit the historical museum and view its exhibit on island history of slavery and industry (we made it there on a different visit)…

this fourth visit was taken up with hanging out on the beach, and making dinner and drinks in the condo.

Some years back, on our second trip to Antigua, the Boyfriend and I found our beach and that’s all she wrote.  Although Antigua (that’s An-ti-ga, folks, not An-tig-u-a) boasts 365 beaches, we’ll never see them.

The owner of the beach’s cafe, Mrs. George, makes her own ginger beer, rum punch, and her goat curry is particularly fine.  Every time I eat it, I know I’ve come home.

Breakfast of Champions (or The New Pina Colada)

The ingredients

1/3 cup Coco Lopez

1/2 banana

2 cups pineapple juice

1 cup grapefruit

1 cup golden rum

Meyer’s Rum (optional)

1/4 cup dry vermouth

ice, enough to fill a blender

The steps

1. Combine all the ingredients in a blender.  Add enough ice to fill nearly to the top. Cover and blend.

2. Pour in glasses and float a little Meyer’s Rum on top if you wish.  Serves 4 or 5.
